Cajun Shrimp and Quinoa Casserole

  • * ¾ pound large shrimp, peeled and deveined
  • * 1 can of chopped tomatoes, drained
  • * 1 jalapenó, seeded and chopped
  • * ½ cups chopped sweet onion
  • * 2 cloves of garlic, minced
  • * 3 tablespoons olive oil
  • * 2-1/2 teaspoons cajun seasoning
  • * Salt and pepper to taste
  • * 1 serving of quinoa
  • * 1 cup shredded cheese
  1. Cook quinoa according to instructions. Heat 2 Tbsp olive oil over medium heat in a cast iron skillet. Cook the shrimp and 1 tsp Cajun seasoning together until opaque, about 2-3 minutes per side. Remove shrimp from pan and set aside. Cook onion, jalapeño, and garlic until tender, stirring often. Mix in quinoa, tomatoes, and remaining Cajun seasoning. Top with shrimp and then sprinkle with cheese. Place in oven and bake at 350 for 15 minutes. During the last 2 minutes, turn on the broiler to high and broil until the cheese is slightly brown and bubbly.
